Banana Mug Cake

I took to buying more bananas during the Covid lockdowns, and often they went a bit mushy and brown. I didn't want to throw them out (...composting at the Farmer's Market drop-off was unfortunately no longer an option) so I found so many banana mug cake recipes online. Sometimes I microwave the ingredients, sometimes I use the toaster oven as a mini oven (...I store way too much stuff in the actual oven to use in a pinch for a quick snack). But it's a yummy and warm snack, good with coffee or tea, and you can choose what kind of sweetener you want to add, or completely leave out. This is my go-to combination but there are a lot of variations to suit your own taste and available ingredients...


In a bowl, or mug, I combine 3 Tbsp of flour, a pinch of salt, and 1/2 tsp baking soda. Then I add in the mushed up banana, one egg, a bit of vanilla extract and/or almond extract, and a Tbsp of milk or melted butter. I like to use 2 Tbsp of brown sugar as my added sugar. I mix it all up, and then pop it in the microwave starting at 1 1/2 minutes, and keep adding 30secs or so until a toothpick comes out clean. In the toaster oven, I bake it for about 10min at 350F.

** If you're using a mug and the microwave, watch it carefully since it likes to expand beyond the top of the mug. I've switched to using a bowl to avoid any potential mess. **


Let it cool a little, pour on some maple syrup, add some chocolate chips or whatever makes you smile, and enjoy a little self indulgence :)
